Paleo Meatball Recipe

Ingredients: 
2 lbs ground turkey
3 tbsp Italian seasoning
1 tsp pepper
1 tsp salt
1 tsp red pepper flakes
3 cloves garlic chopped
1 large onion chopped
1 tbsp oil 

Directions: 
Sautée onion and garlic in oil until soft then let cool. 
Mix all ingredients but turkey in large bowl. Add turkey, mix with fingers to combine. 
Make into golfball sized balls. Makes approximately 25. 
Place on cookie sheet lined with foil not touching. 
Bake on 400 for 20 minutes.

Turkey Meatloaf Recipe

Ingredients:

19.2 lbs ground turkey (at Aldi's for 2.99 now with 93% lean)
1 can tomato paste
4 squirts mustard (about half the amount of the tomato paste)
10 shakes worstershire sauce
Salt and pepper
1 onion minced finely
More tomato paste or ketchup for top (hubby and I prefer tomato paste but the kids prefer ketchup so we make it both ways)

Directions: 

1. Preheat oven to 350.
2. Mix all ingredients but topping of choice (ketchup or tomato paste) and put in bread pan lined with aluminum foil. I like to mix all but the meat then mix in the meat. 
3. Bake for 40 minutes. 
4. Add toppling and bake 10 minutes. 
5. Enjoy and repeat.

About the Mom

I am a grateful believer in Jesus Christ who restores sanity to my life daily. Sometimes minutely. I'm a wife to a wonderful man and a mother to 4 beautiful girls. I am richly blessed. And a beautiful mess. 

I've been blogging for a couple of years now, but as often happens life got in the way. After not blogging for quite a while and only blogging sporadically for a while before that, I felt like it was time for a new blog. A fresh start. A place to share my recipes and any bits of momsense I am able to glean from my days. 

The last couple of years have been full of change, some of which has been painful and all of which has transformed me into who I am now. In my opinion, it's been a change for the better and I can see the hand of God in all of it. I can only hope that my struggles and victories can not only be memorialized so that I don't forget them, but that they might also help someone else out there.
